Ingredients

1 Spicito Chile Verde seasoning packet (1.5 oz)

1 cup water

1.5–2 lb boneless, skinless chicken thighs (or mix with breasts)

1 small onion, thinly sliced

2 tbsp oil (optional, for browning)

Corn or flour tortillas

Diced onion, cilantro, lime wedges

Crumbled queso fresco or Cotija (optional)
Directions

Pat chicken dry; leave whole or cut into large chunks.

Optional: Heat oil in a skillet over medium-high and sear chicken 2–3 minutes per side for extra flavor.

In a pot or deep skillet, whisk 1 Chile Verde packet into 1 cup water until dissolved.

Add chicken and sliced onion to the pot, turning chicken to coat in the sauce.

Bring to a gentle simmer, then cover and cook on low 30–40 minutes, stirring occasionally, until chicken is very tender.

Shred chicken with two forks directly in the pot and stir into the sauce. Taste and adjust salt only if needed.

Serve in warm tortillas topped with onion, cilantro, cheese and lime juice.
