Taco Soup Recipe | Easy, Hearty One-Pot Dinner

Ingredients

  • 1 Spicito taco seasoning packet (1 oz)
  • 2/3 cup water
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can pinto or kidney beans, drained and rinsed
  • 1 can diced tomatoes (14–15 oz)
  • 1 cup corn
  • 4 cups beef or chicken broth
  • Optional: 1 small onion, diced

2/3 cup water

1 lb ground beef or turkey

1 can black beans, drained and rinsed

1 can pinto or kidney beans, drained and rinsed

1 can diced tomatoes (14–15 oz)

1 cup corn

4 cups beef or chicken broth

Optional: 1 small onion, diced

Directions

  1. In a large pot, brown ground meat (and onion if using) over medium-high. Drain extra fat.
  2. Add 1 taco seasoning packet and 2/3 cup water, stir and simmer 2–3 minutes.
  3. Add beans, tomatoes, corn and broth. Stir well.
  4. Bring to a boil, then reduce heat and simmer 20–30 minutes to blend flavors.
  5. Serve with tortilla chips, cheese, sour cream and cilantro.
