Taco Stuffed Bell Peppers

Ingredients

  • 1 Spicito taco seasoning packet (1 oz)

  • 2/3 cup water

  • 1 lb ground beef or turkey

  • 4 large bell peppers, halved lengthwise and seeded

  • 1 cup cooked rice (or cauliflower rice)

  • 1–1.5 cups shredded cheese

  • 1/4 cup water or broth (for baking dish)

  • Chopped cilantro or green onion for garnish

Directions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

  2. Optional: Blanch bell pepper halves in boiling water 3–4 minutes, then drain and place cut-side up in the baking dish.

  3. Brown ground meat in a skillet, drain excess fat if necessary.

  4. Add 1 taco seasoning packet and 2/3 cup water, then simmer 3–5 minutes until thickened.

  5. Stir in cooked rice and about half the cheese.

  6. Fill pepper halves with the taco mixture, packing it in gently.

  7. Pour 1/4 cup water or broth into the bottom of the baking dish. Cover with foil and bake 25–30 minutes.

  8. Remove foil, sprinkle remaining cheese on top and bake another 5–10 minutes until melted.

  9. Garnish with cilantro or green onion and serve warm.
